FOOD INDULGENCE: HOW TO MAKE NIGERIAN FRIED RICE

It's almost weekend and I thought I'd share a recipe for making fried rice the Nigerian way.
It's one of my favorite meals because it contains fresh crunchy veggies and it's so colorful!!!
No Nigerian event is complete without Fried Rice.
At weddings, naming ceremonies, birthday parties, graduations, just because celebrations, Fried rice has been invited to all.
Even on Sundays, where it's an unwritten rule in most Nigerian homes to cook rice, fried rice is most likely to be considered after jollof rice and rice with stew.
The bff of fried rice is almost always fried chicken or turkey.....so the complete meal is called FRIED RICE AND CHICKEN........with a side of Nigerian style coleslaw!
I don't know why but when our Nigerian mothers try to teach us how to cook, it almost always looks way more complicated than it really is.....just like those hardcover cookbooks I gave up reading long ago! LOL!!!!
" You better learn oh, before they say I didn't teach you how to cook!!!!" is the most likely thing you'll hear over your shoulders as they monitor you. LOL!!!
My cousin, Chichi is a fabulous cook and I love the fact that she makes cooking really easy! In her words ".....because cooking should be fun and not a daunting task!"

Well, before I bore you with my chitchat, LET'S GET COOKING!!!!
Fried Rice
5 standard cups of rice
2 kg chicken/turkey
1 kg Carrots
2 large Green Peppers
1/2kg Green beans
10 hotdogs
4 Spring Onions
2 Onions
Knorr cubes
Curry
Salt
4 cloves of Garlic
Powdered Ginger
Vegetable Oil
1.) Parboil your rice and set aside.
2.) Spice your meat with Knorr, Curry, Salt, and Ginger.
Cut the onions and garlic and add to the meat.
Steam the meat on low heat till it brings out its own stock.
When the meat is almost done, add some water and adjust the spicing to your taste. Let it cook a little more.
Make sure you have enough stock to finish cooking the rice.
3.) When the meat is done, strain it from the stock and fry or bake.
Return the stock to the stove and bring to a boil.
Pour in the parboiled rice and cook till the rice is done and water is fully dry.
4.) Cut up the vegetables and hotdogs. Add a little oil to a big pot and stir fry the vegetables. Spice up the veggies to your taste.
5.) Add the cooked rice to the veggies and mix well.
6.) Enjoy with a big piece of chicken or turkey ;)

Hey there beautiful people, today it’s all about apples, mmhmmm A is for apple.
For my parents wedding anniversary I baked this delicious apple coffee cake.
The first time I tried out this recipe I couldn’t believe my taste buds, it was absolutely luscious, and everyone enjoyed it.
So while planning their anniversary, I thought to myself; Why not add it to my To-do recipe list for the anniversary and I’m so glad I did.

Here it is
What you’ll need:
BASE
2 1/2 cups of flour
½ teaspoon salt
2 tablespoon granulated sugar
1 cup unsalted butter chilled and cut into 1 inch pieces [you can also use your normal margarine or butter if you can’t get the unsalted butter]
¼ to ½ cup ice water
APPLE FILLING:
6 large apples peeled, cored and sliced ¼ inch thick
¼ cup granulated white sugar
¼ cup brown sugar
1 tablespoon lemon juice
1 teaspoon cinnamon
A pinch of salt
2 tablespoons butter
1 ½ tablespoon cornstarch or corn flour
For The Base:
1. In a bowl, sift the flour, then add the sugar and salt, stir until well combined. Add the butter and beat with an electric mixer using the dough hooks instead of the normal beater. Picture of the dough hook is below.
2. Beat until the mixture resembles coarse meal (about 15 seconds)
3. Pour ¼ cup of water in a slow steady stream and keep beating until the dough holds together.
4. Sprinkle flour on a clean flat surface and place the dough on it. Roll it into a ball and divide it into half, flattening each half into a disk.
5. Cover with a plastic wrap, and refrigerate for about an hour before using. This will chill the butter and relax the gluten in the flour.
6. Butter an 8 inch baking pan, gently sprinkle flour on it. Set aside. After the dough has chilled sufficiently, remove it from the fridge and place on a clean flat lightly floured surface. Roll the pastry into a 28 inch circle. (To prevent the pastry from sticking to the counter and to ensure uniform thickness, keep lifting up and turning the pastry a quarter turn as you roll (always roll from the centre of the pastry outwards.)
7. Gently transfer the pastry to the pan, trim the edge of the pan if there is any excess pastry hanging out. Cover with a plastic wrap and place in the refrigerator.
Make The Apple Filling:
1. In a large bowl combine the sliced apples with the sugars, lemon juice, ground cinnamon and salt.
2. Let sit at room temperature for at least 30 minutes or up to 3 hours. This process is known as ‘Macerating’.
3. Then, place the apples and their juices in a strainer that is placed over a large bowl (to capture the juices). Let the apples drain for about 15 - 30 minutes or until you have about ½ cup of juice.
4. Pour in the collected juice into a small pan and add 2 tablespoons of butter. Place in the microwave and boil the liquid, on high, about 5 - 7 minutes (you mustn’t necessarily use a microwave; you could use your electric or gas cooker as well.
5. Transfer the drained apple slices to a large bowl and mix them with cornstarch (corn flour).
6. Then pour the reduced syrup over the apples and toss to combine.
7. Pour the apples and their syrup into the base you refrigerated.
8. In a small bowl combine a table spoon of sugar, a teaspoon of cinnamon, a tablespoon of flour and butter and sprinkle on top of the apples.
9. Preheat the oven to 220 degrees C (425 F). Place the oven wire rack at the middle and place the large oven pan to the lowest level before preheating the oven.
1 Set the apple coffee cake on the middle rack and bake for about 45 - 55 minutes or until apples feel tender when a sharp knife or tooth pick is inserted through it. Remove the cake from the oven and place on a wire rack to cool for about 3 - 4 hours before cutting. Serve at room temperature.
Makes one Apple coffee cake. Enjoy!

1 Never forget to macerate the apples or else you’ll end up with a dry apple coffee cake
2 If you want to indulge yourself or your guests, you can serve this cake with ice cream or whipped cream

A CHOCOLATE AFFAIR: HOW TO MAKE CHOCOLATE CHIP COOKIES

Well hello there
beautiful people, I trust you all had a splendid weekend.
I guess some of you
hung out with friends, went clubbing, shopping, window shopping, weddings,
church or just stayed at home to rest or do some house chores. Whatever it was
you did during the weekend, I hope you enjoyed it.
Last week was my
parents wedding anniversary, so it was a very busy week for me.
I spent my days preparing a surprise party. It entailed intense shopping and waking up by 3.25 am for 3 days, but guess what?
It was worth it when I saw the priceless expression on their faces. It was beautiful to see them so speechless and elated.

This week and next week
I’ll be sharing the anniversary recipes with you all. Below is the picture of
what I prepared for the anniversary.

As we go on I’ll be
sharing some good party recipes that you and your friends/guests will relish on
and will have your guests crown you the best host ever!
I’m starting with the
Chocolate chip cookies, why?
That’s because I’m a recovering chocoholic [#yea, there I said it] and because they are irresistible scrumptious delicious cookies that serve as great party treats. I can guarantee you, your guests won’t keep their hands off them. And even if you decided to bake them for your family, your loved one’s would find it hard to keep their hands off the cookie jar [#Trust me when I say this; I always hide the cookies away from my loved ones especially my dad].

You, my beautiful reader,
should try this recipe; I promise you won’t regret it.
Chocolate chip cookies
You’ll need:
2 cups flour
½ teaspoon salt
(leveled)
1 cup butter (leveled)
2/3 cup granulated
sugar or brown sugar
1tablespoon vanilla
extract
2 eggs
1 teaspoon baking soda
(dissolved in hot water)
½ cup peanuts or
walnuts (optional)
2 cups dark chocolates
or chocolates
(I bought 2 bars of
Cadbury chocolate and chopped them)
Preheat oven to 190
degrees. Butter your baking pan and sprinkle with a little bit of flour so the
cookies come off the pan easily.
1. In a bowl beat your
butter and sugar until creamy with an electric mixer [or manually] then add
vanilla and eggs, beat all for 1 minute.
2. Add the dissolved
baking soda and beat, add in the flour and beat for 1 minute. Turn off your
mixer and keep aside.
3. Gently fold in your
chocolate chips using a rubber spatula or a wooden spoon [folding in means you
gently mix the ingredient into the batter].
4. Spoon 1 teaspoon of
batter on your greased pan. Use the back of a spoon to flatten the cookies.
5. Bake for 12 – 15
minutes or until light brown.
6. Remove from baking
pan, cool on wire racks and serve.
Makes 48 cookies.

I used. I bought 2 bars.

Pixie dust
1. Chocolate
is made from plants which mean it contains many of the health benefits of dark
vegetables. These benefits are from flavonoids which act as antioxidants.
Antioxidants protect the body from
aging caused by free radicals which can cause damage that leads to heart
disease.
2. Flavonoids
also help relax blood pressure.
3. Dark
chocolates contain Serotonin which acts as an anti-depressant.
4. Some
of the fats in chocolate do not impact your cholesterol. The fats in chocolate
are 1/3 Oleic acid, 1/3 Stearic acid and 1/3 Palmitric acid.
In other
words, they are healthy fats.
5. If
you want to indulge in chocolates, go for dark chocolates because it’s
healthier but it must not be necessarily be dark chocolate for you to get your
indulgence on.
6. Chocolate
is still a high calorie, high fat food. Like a bar of dark chocolates has
around 400 calories. If you eat half a bar of chocolate a day or even more than
that, you must balance those 200 calories or those extra calories by eating
something else. Cut out other sweets or snacks and replace them with chocolate
to keep your total calories the same.
7. Indulge,
enjoy and don’t feel guilty about it, that’s why it’s called indulgence. Just
remember to balance it with more healthy snacks such as; vegetables, fruits and
of course water.
Life
is beautiful, so also are chocolates. Indulging once in a while doesn’t hurt,
so live, love, bake and indulge. Take good care of yourselves and enjoy the

Today we are going back
to basics.
Yea we are.
It’s going to be all about basic baking must-have.
Having these in your kitchen will go a long way. I call them my “baking pals”; cuz they always stick up for me.
I see baking as a gorgeous edible art, and for you to enjoy and appreciate this art, it is important to know some basic things you need to produce a consistent outcome. Here are some basic must-have;

Having these in your kitchen will go a long way. I call them my “baking pals”; cuz they always stick up for me.
I see baking as a gorgeous edible art, and for you to enjoy and appreciate this art, it is important to know some basic things you need to produce a consistent outcome. Here are some basic must-have;

Soda
SIEVE
Most people believe
sifting your dry ingredients such as flour, baking powder and what have you
not, is a total waste of time, some even go as far as saying “Na over sabi dey
do you” but that my dear reader is a
baking faux pas. Sifting your ingredients serve an important purpose in baking.
It breaks up any clumps in the dry ingredients, making them easier to combine
in your mixing bowl. Just in case your
ingredients are so old that they are clumping together, sifting will turn them
into a fine powder again
You can get it at your
baking supplies store or where kitchen utensils are sold.
You can get it within
this price range: N250 – N500; depending on the size.
Measuring cups
Measuring
accurately is probably the most important cooking skill in the kitchen.
Graduated measuring cups like those in the picture above are made in ¼ cup, 1/3
cup, 2/3 cup, ¾ cup, ½ cup, 1 cup and 2 cup sizes. When baking cakes, cookies,
pie crust, candies and bread, measuring carefully and accurately helps to
produce a consistent outcome.
Measuring
cups are used for flour, sugar, powdered sugar, butter, e.t.c. To use this
measuring cups; spoon or scoop in the ingredient into the cup and run a knife
or spatula across the top to level the surface and scrape any excess back into
the container. Always remember to level the surface, it’s really important.

those that reside in Abuja, you can get them at Sahad stores for N300.

Wooden Spoon
At
times this wooden spoon a.k.a “eba
turner” serves as a good substitute for a rubber spatula when a recipe entails
folding in some ingredients. In case you’re wondering what the item sitting
beside the measuring cups above is; it’s the wooden spoon.
Rubber Spatula
Just
about everyone who bakes needs it. They allow you to scrape all the batter out
of the pan. They are also useful in smoothing the top of the filling before
baking the cake and to fold in certain ingredients when a recipe entails doing
that, and after that licking the batter off the spatula [#which seems to be my brother’s
favourite part of baking].
Electric Mixer
The
most conventional method of using a wooden spoon to beat your batter is okay,
but it’s kind of stressful and consumes more time. In addition to that; you
need to beat air into the batter for a fluffy cake and this cannot be achieved
via hand mixing.
Electric
mixers also make it easier to achieve a batter of smooth consistency because
the blades are powerful enough to blend certain solids, such as butter and
sugar with liquids.
These
are the reasons why each time I turn on my electric mixer to beat my butter and
sugar, I always thank God for the electric mixer and ask Him to bless the
person that invented it, even though I know the person is long gone.
For
Abuja residents you can get this wonderful gadget at Sahad stores or home
electronics stores at this range: N4000 – N7000; depending on the product.
Baking Soda
Most
people I know are not familiar with this wonderful baking ingredient. Each time
I mention baking soda in a baking discussion they’ll be like; “Huh?” Baking
soda also known as Sodium bicarbonate or bicarbonate of soda is about four
times as strong as baking powder. Most recipes that contain an acidic
ingredient such as; butter milk, sour cream, chocolate, cocoa always include
baking soda.
Baking
soda is added to neutralize the acids in the recipe plus to add tenderness and
some leavening. When using baking soda in a recipe make sure to sift with the
other dry ingredients before adding to the batter to ensure uniformity.
Otherwise the baked goods can have large holes.
It’s
available at baking supply stores and goes for N100
Pixie dust
1.
Baking
soda starts to react and release carbon dioxide gas as soon as it is added to
the batter and moistened. So make sure to bake batter immediately.
2.
To test
baking soda’s effectiveness; Mix ¼ teaspoon baking soda with 2 teaspoons of
vinegar and the mixture should bubble immediately.
3.
In the
kitchen, baking soda will keep away garbage odors; Sprinkle the bottom of the
pail and then sprinkle again after you put a new bag in.
4.
To
remove stale smells from containers, rinse out with hot water and baking soda.
If the smell persists, let the container soak overnight in the baking soda and
water mixture.
5.
For
burnt on food in the bottom of pots; Sprinkle with baking soda, then add hot
water. Let soak overnight; the dried on food will come loose much more easily.
6.
For
personal use; Hair brushes and combs can be cleaned on a baking soda solution.
7.
In
laundry; to remove grease stain, either add baking soda to the wash load or
pre-treat the stains with a baking soda paste. A baking soda paste is 3 parts
baking soda one part water
Baking is about fun, love and family. I enjoy
and love baking, knowing that I can mix these bare raw ingredients and make
breathtaking-scrumptious-luscious- treats always makes me feel so elated. I
really hope on this tour you all will experience and the joy of baking.
